Gourmet Bean Soup

  • 1 large onion chopped
  • 1 large can tomatoes
  • 1 tsp chili powder
  • 1 clove garlic chopped
  • Salt and pepper to taste
  • 1/2 cup of red wine
  • 1/2 cup chopped parsley
  • 2 cups Gourmet Bean soup mix
  • 2 quarts water

Place beans in large kettle cover with water and let soak overnight. In morning drain and add water and ham (optional), simmer slowly 2 1/2 to 3 hours. Add onion, tomatoes, chili powder, garlic, salt and pepper. Simmer for 1 hour longer. Before serving add parsley and red wine if desired. Serves 10

Green Split Peas

  • 1 cup Hadley’s Green Split Peas
  • 2 quarts water
  • 1 small onion, chopped
  • 1 large carrot, peeled and grated
  • 1/4 tsp black pepper
  • 2 cups diced ham
  • 2 bay leaves
  • 1/2 tsp salt
  • 1/2 tsp basil
  • Sprinkle of cayenne

Boil all ingredients vigorously 20 minutes, uncovered. After 20 minutes cover pot, cook barely boiling about 1 hour or until vegetables are soft enough to blend. Remove bay leaves and blend soup using small quantities at a time. Reheat using clean sauce pan. Add 1/4 tsp thyme, simmer 20 minutes. Serve in hot bowls with croutons.

Ingredients: Yellow Split Peas, Lentils, Red Lentils, Long Grain Rice, Pearled Barley, Split Green Peas, Alphabet Letters ( Wheat, Sugar, Durum Semolina, Niacin, Ferrous Sulfate (iron), Thiamine Mononitrate, Riboflavin, Folic Acid).

Hadley Soup Mix

  • 1 large onion chopped
  • 3 carrots peeled, sliced
  • 8 cups of broth (beef, chicken, or lamb)
  • 1 clove garlic chopped
  • 6 stalks celery
  • Salt and pepper to taste
  • 1 Cup Hadley’s soup mix

For each cup of soup mix, use 8 cups of liquid. Bring to a rolling boil. Reduce heat to simmer, add onions, garlic, celery, carrots, salt, and pepper. Additional vegetables are optional. Simmer for 1 1/2 to 2 hours, depending on amount used. Extra liquid may be needed if other vegetables are added. Serves 8.
