Instructions
Slice outer peel and pith from grapefruit. Cut grapefruit out of membrane to make sections. Slice red pepper into thin rings. Divide watercress sprigs evenly amoung four salad plates. Arrange grapefruit segments on watercress. Fan red pepper rings evenly over each plate. Arrange avocado slices, shredded chicken and dates evenly in a spiral around each plate. Drizzle each with dressing and serve.

Want a delicious, easy dressing?
Whisk together 1/4 cup Olive Oil with 2 tablespoons of Raspberry Vinegar or Red Wine Vinegar. Add salt and pepper to taste. Mix until well-blended.
