Date Nut Bread

Yields: 5 | Preptime: 60 minutes

Ingredients:

1 c California Grown Cooking Dates
1 tsp Baking Soda
3/4 c Boiling Water
1 Egg
3/4 c Light Brown Sugar
1 tsp Vanilla
1 1/2 c Flour
1 tsp Baking Powder
1 tsp Salt
1/2 c Walnuts Halves and Pieces

Instructions:

Sprinkle the dates with soda, pour boiling water over the mixture and let stand until cool. Break egg yolk into a bowl, gradually add sugar, add vanilla. Combine with date mixture. Sift flour, baking powder, and salt into the mixture and mix. Do NOT beat. Pour into 8 x 4 x 3 loaf pan. Bake for 75 minutes at 350˚. Let cool. Keep covered.
